Ingredients:
4 Mackerel
1 tsp mustard seeds
1/2 tsp cumin seeds
6 Carrots, peeled, coarsely grated.
1 brown onion, coarsely grated
1 Garlic clove, crushed
1/2 cup finely chopped coriander
1 egg, lightly whisked
1/3 cup (50g) plain flour
2 tbs ghee
1 cup (250g) natural yoghurt
2 tbs lemon juice
1/2 tsp ground cardamom.
Preparation:
1. Preheat oven to 120°C. Place the mustard and cumin seeds in a small saucepan over low heat. Cook, tossing, for 1 minute. Remove from heat. Combine the seeds, carrot, onion, garlic and coriander in a medium bowl. Add the egg and flour and stir until just combined. Season with salt and pepper.
2. Heat the ghee in a large frying pan over medium heat. Pouring ladles flattening carrot mixture to give the desired shape. Use a spatula to flatten to 10cm in discs form. Cook for 2 minutes or until golden. Turn and cook for a further 1 minute. Transfer to an oven to keep warm. Repeat in 3 more batches with remaining carrot mixture.
3. Fry the mackerel both sides. Taste and season with salt and pepper.
4. To make sauce, combine the yoghurt, coriander, lemon juice in a small bowl. Taste and season with salt and pepper.
Divide the mackerel and the fritters on dishes. Top with yoghurt and serve immediately with lemon wedges, if desired.

Ingredientes:
4 caballa.
1 cucharadita semillas de mostaza.
1/2 cucharadita de semillas de comino.
6 zanahorias, peladas y ralladas gruesamente.
1 cebolla marrón, rallada gruesamente.
1 diente de ajo machacado.
1/2 taza de cebolla finamente picada con cilantro.
1 huevo, ligeramente batido.
1/3 taza (50 g) de harina.
2 cucharadas de mantequilla de búfala.
1 taza (250 gramos) de yogurt natural.
De jugo de limón 2 cucharadas.
1/2 cucharadita de cardamomo molido.
Preparación:
1. Precalentar el horno a 120 ° C. Coloque las semillas de mostaza y comino en una olla pequeña a fuego lento. Cocine, removiéndolo, durante 1 minuto, hasta que el aroma se desprenda. Retirar del fuego y Combinar las semillas, la zanahoria, la cebolla, el ajo y el cilantro en una taza mediana. Añadir el huevo y la harina y revuelva bien. Sazone con sal y pimienta.
2. Derrite la mantequilla y vierte cucharas de la mezcla de zanahoria aplanándolas hasta darles la forma de buñuelo deseada. Cocine unos 2 minutos o hasta que estén doradas. Dar vuelta y cocinar por 1 minuto más. Pasarlas a una bandeja de horno para que se mantengan calientes. Repita el proceso en 3 lotes mas con la mezcla de zanahoria restante.
3. Freír la caballa en ambos lados. Pruebe y sazone con sal y pimienta.
4. Para hacer la salsa, combine el yogur, cilantro, jugo de limón y en una taza pequeña. Pruebe y sazone con sal y pimienta.
Divida la caballa y los buñuelos en los platos. Cubrir con la salsa de yogurt al cilantro y servir inmediatamente con rodajas de limón, si lo desea.
